About Gluten and Grains
Gluten is a protein structure found in wheat, rye and
barley. Oats may also cause reactions in some people,
and therefore if you have celiac disease or gluten sensitivities,
avoid oats. Also to be avoided are triticale, spelt, and
kamut. Gluten-free grains include millet, quinoa, and
amaranth and can often be consumed by those with celiac
disease or gluten sensitivities. Products made with soy
and other beans, rice, corn, tapioca, and potatoes are
acceptable. WATCH OUT! Don’t be fooled. Products
labeled “wheat-free” are not necessarily gluten-free.
Check the ingredients for oats, barley or rye, all of
which are toxic to celiacs. Soy sauce is another one;
unless it’s labeled “wheat-free tamari,”
it is probably fermented with wheat. Here are a couple
of surprises….Imitation crabmeat is made with wheat,
and blue cheese is inoculated with wheat! A good rule
to remember is that if you’re not sure about a certain
product, call the manufacturer. Here’s our Gluten-Free

gluten-free products. These products appear to be appropriate
for people on gluten-free diets. But please remember,
that there are things out of our control. Ingredients
may change frequently, so read labels. And there’s
always the possibility of individual reaction to any product
and cross-contamination.
