LARRY AND RAY’S ITALIAN MEATLOAF
This is a winner!!
1 ½ lb ground beef
1 lb hot Italian sausage
1 cup bread crumbs (we use Junior’s because they
are simply the BEST)
2 eggs
1 18 oz can Muir Glen crushed Fire Roasted tomatoes, drained
1 tsp finely minced garlic ½ t dried rosemary,
crushed ½ t dried thyme
2 oz Fontina cheese, sliced
Bread crumbs for dusting top
Preheat oven to 350 degrees.
Remove casings from sausage and mix with ground beef.
Mix in eggs, breadcrumbs, tomatoes, garlic, rosemary and
thyme. Spread half in lightly greased bread pan. Put slices
of cheese over center of meat and top with remaining meat
mixture. Press to seal. Dust top with more bread crumbs.
Bake for 55-60 minutes or 170 degrees in center. Let rest
for 10 minutes. Make it more wonderful: pass grated mozzarella
and a good marinara when serving. |
