GRILLED EGGPLANT: A VERY DELICIOUS WAY!
My favorite way to grill eggplant…definitely the most delicious way to prepare eggplant! This also works well with grilled zucchini or summer squash.
1 good sized eggplant
Olive oil
4 T olive oil
3 cloves garlic minced
1 T balsamic vinegar
Red pepper flakes to taste
Salt, pepper to taste
2 T Parsley, minced
Don’t peel the eggplant! Slice it ¼” thick and salt it heavily. Place in a colander and let sit for about half an hour. Meanwhile, heat the grill. Mix olive oil and minced garlic. Set aside. Rinse the eggplant well, blot dry, brush with olive oil. Grill it until soft, flipping it often so it doesn’t burn. It should be well browned. Put on a platter and drizzle with the olive oil/garlic mixture and sprinkle with red pepper flakes to taste and ground black pepper. Place in a 200 degree oven for about 10 minutes to let the oil penetrate the eggplant. When ready to serve, top with parsley. |
