Thai Red Curry Roasted Salmon with Bok Choy


2 whole baby bok choy
2 teaspoons plus 2 tablespoons vegetable oil
1 Tablespoon Thai red curry paste*
1 13 1/2- to 14-ounce can unsweetened coconut milk*
1/4 cup finely chopped fresh lemongrass or 1 tablespoon grated lemon peel
1 tablespoon brown sugar
2 1/2 tablespoons fresh lime juice
2 tablespoons fish sauce (nam pla*)

4 6-ounce salmon fillets

*Thai red curry paste,fish sauce (nam pla), and unsweetened coconut milk are all available at healthy living!

In a good-sized pot of boiling salted water, cook the bok choy until it is crisp-tender, about 2 minutes, drain and set aside. Heat 2 teaspoons of vegetable oil in a heavy large skillet over medium heat. Add the curry paste and stir for 30 seconds. Then add the coconut milk, chopped lemongrass (or grated lemon peel) and 1 tablespoon of brown sugar. Simmer gently until the mixture is slightly thickened and reduced to 1 cup. This should take about 5 minutes. Stir in 2 1/2 tablespoons of fresh lime juice and 1 tablespoon fish sauce. Season with salt and pepper to taste. Set the curry sauce aside.

Preheat oven to 400°F. Heat 1 tablespoon oil in a heavy large ovenproof skillet over high heat until the oil shimmers. Sprinkle the salmon with salt and pepper, and add to skillet. Cook salmon 2 minutes per side, turning carefully. Transfer the skillet to the preheated oven. Bake the salmon until it is opaque in center, about 6 minutes. Meanwhile, heat the remaining 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat. Add the bok choy and sauté until it begins to brown in spots, about 4 minutes. Drizzle the bok choy with the remaining 1 tablespoon of fish sauce. Bring that wonderful curry sauce to a simmer. When it is warmed, ladle it onto 4 serving plates, and then arrange 1 salmon fillet and a small mound of bok choy atop curry sauce on each plate and serve. Serve this amazing curry with jasmine rice and a sprinkling of roasted peanuts. A bowl of fresh slices of pineapple and mango makes a fantastic addition.
