KATY'S TURKEY BURGERS

I like this one because it has fantastic taste, is soft and juicy, and stays together better than others I’ve tried.

2 cups diced day-old bread, crusts removed, 1/2” dice
1/2 cup half and half
1/4 cup ricotta cheese
1 lb ground turkey
1 egg beaten
3 T minced shallots
1/4 t minced garlic
2 t chopped flat=leaf parsley
1/4 t thyme leaves
1/2 t ground dried juniper berries (for a jolt of flavor!)
1 t coarse salt
2 T olive oil, plus more if needed (if you’re broiling)
4 slices fontina cheese
4 hamburger rolls

Mix the half and half and ricotta together in a large bowl.  Add the bread cubes, toss, and let soak for about 20 minutes.

In a medium mixing bowl, combine the meat, egg, shallots, garlic, parsley, and thyme.  Stir.  Add the juniper berries, pepper and salt.  Add the soaked bread and mix to combine.

If grilling, preheat the grill using a lower heat under the burgers and grill for about 4 minutes per side.  Top with fontina and grill a minute longer until cheese begins to melt.  If cooking on the stove, heat olive oil in a pan over medium heat.  Add the patties and cook for 6 minutes per side.  Top with fontina and broil until cheese begins to melt. Serve on hamburger rolls.
