GRILLED TURKEY CUTLETS WITH DILL PICKLE SALSA

4 large boneless turkey cutlets
1 t olive oil
¼ t ground cumin
1/8 t ground cayenne pepper
2 clove garlic, minced
1 T finely chopped fresh cilantro

Pound cutlets to even thickness. Combine marinade ingredients, add turkey and place in refrigerator for at least 1 hour or overnight. Remove cutlets from marinade and grill over hot fire 4-5 minutes per side, until golden brown. Fantastic with Dill Pickle Salsa….

Combine all ingredients:

1/3 cup finely diced dill pickle
1 large tomato, seeded, finely diced
1 medium jalapeno pepper, finely diced
1 T finely chopped cilantro
1/3 cup finely diced red onion
1 T red wine vinegar
2 T olive oil
Salt & pepper to taste
