Curried Red Lentil Salad
Here’s a wonderful, spicy
salad. Don’t be put off by all the spices it entails.
They are all available at HL, and the salad is a snap
to assemble.
Clear curried vinaigrette: whisk together and set aside:
3/4 c vegetable oil
1/2 c wine vinegar
2 T sugar
2 t salt
2 t pepper
1 t ground cumin
1 t dry mustard
1/2 t turmeric
1/2 t mace
1/2 t coriander
1/2 t cardamom
1/4 t cayenne pepper
1/4 t ground cloves
1/4 t nutmeg
1/4 t cinnamon
Salad
1 lb dried red lentils
1 c currants
1/3 c capers
1 1/2 c very finely chopped red onion
wash lentil. Cook in boiling water for 5-6 minutes or
until just tender. Drain in a colander and rinse well.
Combine with the dressing and let sit overnight. at least
2 hours before serving, add the currants, capers and onions
to the lentils. Let marinate several hours. ENJOY! |
