ROASTED RAINBOW ROOTS
2½ lbs. Pete’s Greens Rainbow Roots
mix
¼ cup olive oil
Salt & Pepper to taste
3 Tbs. Stonewall Kitchen Roasted Garlic Onion Jam
Preheat oven to 375°. Scrub the skins of the vegetables
and peel those you wish to be peeled. Cut root vegetables
into 1” cubes and toss with olive oil, salt and
pepper. Put them in a baking dish and roast 45-55 minutes.
Check vegetables, by variety, for doneness with a fork.
When pierced easily remove from oven and stir in jam.
Serve warm.
Makes 6-8 side dish servings.
